Jackfruit...my favorite!

Jackfruit is huge...sometimes bigger than a 6 month old baby! So this morning I bought a chunk.

It takes some work to separate the edible fruit from the casing. Jackfruit is used as a cooked vegetable and as such the whole thing is eaten (except for the rind).

Each section of the fruit has a big pit or seed and a light casing around it. We are close to eating now!
